A men's cut here is about the grow out as much as the cut. Anything can look sharp the day it is done. The question is whether it still works in three weeks, and that comes down to how the weight is removed rather than how short it goes.
If your hair is thinning, changing texture, or going grey at a different rate on top than the sides, say so. All of that changes what will hold, and it is easier to work with than to work around.
